Week 11 of SP Final Exam & Graduation

June 11, 2013 Tuesday
Final Exam: It's our Superior Pastry final exam! I got envelop #3, Nid d'abeilles for my exam cake and plated dessert, chocolate bonbons (Praline for molding and Palets or for dipping).  It went well.  At first, I just wanted to do my plated dessert on a glass, but Erin P. told me it would look better on a plate, so I was rushing to glue the glass on a plate, then put whatever I could find on it. LOL My palets or didn't turn out great at all..... but at least the praline was fine :-) I also did pour sugar for presenting the bonbons as a platform.  It's so easy to do! When I was waiting the sugar to cool before removing the cake rings, Chef Eric Jaouan told me to watch for the time.  Relax Chef! I got this! LOL After the exam, Chef Jocelyn Bouzenard came back from 2A and was very excited to tell us how proud the chefs were of our final products.  And the judges thought our products looked better than the previous class.... oops sorry Cynthia and Tika! LOL Then, we still needed to clean up and do the last clean race. Chef Jocelyn yelled "LESLIE", and Chef Eric also said "Where's the sous chef? LESLIE" I guess being a guy in a majority-female-class had to do EVERYTHING! Wait, they could have told Jason to do it too????

All of our products of Group B.  Mine are the 3rd row from the bottom.  The 1st one was Daneet's, and the 2nd one was Lisa's.  Erin P.'s was on the 4th.

Hair Cut: It had to be my last time getting my hair cut here in Ottawa, thank God!

Group A Exam: When I was on the bus, Jason texted us from school saying there was no powder there while Group A was having the final exam in the kitchen! Sorry to Group A! You guys had earthquake on sugar exam, and now no power for final exam?! What a curse! What's next? I went to school to meet up with Jason in the student lounge.  Then we went up to 2nd floor, we saw Chef Eric Jaouan bringing cakes to 2A.  Chef Eric said they were almost done, 'cos the room was getting hot, things would melt, so they had to present whatever they had as soon as possible.  I saw Chef Hervé Chabert judging the products.  Jason and I waited until they finished.  They all did well.  I'm sure everyone would pass, and meet on Friday for the graduation.  I can't believe it's over!

Class of 2013 Graduation Ceremony and Reception @ The National Gallery of Canada:  It is my dream to study in Le Cordon Bleu.  I am so grateful to have achieved my goal -- to graduate here! I must say, these 9 months were quite special.  I have learned so much as a pastry student, as a person, and as a friend.  I am so happy to have met all these special people all over the world.  And also, to be able to learn from these talented chefs from France.  I am forever grateful.  Of course, without my dad's financial help, I won't be here! And all the supports from family and friends!  Tonight is the night! Let's celebrate!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

-Jocelyne: for being my baking partner in IP and SP, for helping me in practical all the time, for all of your wisdom, for sharing your experience! (Have a great time in the Island with your special one, and I will be making your wedding cake look just like Chef Hervé's as you requested!)

-Quinn (and Matt): for being B.C. friends, for the pizza party, pierogi party, for all your hugs and kisses, Oh and for texting me all those questions whenever you wanted LOL LOL and for being my secret competitor LOL (I want to meet you guys in B.C. one day, I want sushi!!!!!)
