Week 6 of IP

February 4, 2013 Monday
Demo Class#9: Chef Eric Jaouan's Dacquoise aux pistaches, granité aux griottes, jus de fraises des bois (Nut cake with pistachio, with cherry sorbet, wild strawberry juice and decorated with tuiles); and Chaud-froid au chocolat, crème glacée au caramel (Warm cake with caramel ice-cream) from today's class.






Practical Class#9: Lately, my spot in practical class was taken by some other classmates.... so I decided to go line up right after demo class.  I was surprised to see 4 other classmates already there lining up.  Thank God they always stuck with their own spots, so I thought I didn't need to worry.  Guess what? Monica was sous chef today..... so she got to go in 15 mins earlier and help Chef to prepare ingredients and tools.  When Jocelyne and I went in, Monica already "claimed" her spot AND Vicky's............ Before class, we were planning to do the sorbet together and shared.  In this case, we decided to stick with our plan, but I needed to go to another side of the table and worked in Tanvi's spot (she wasn't there today).  Thank God it turned out fine.


February 5, 2013 Tuesday
Demo Class#10: Today we had Chef Hervé Chabert to show us Mousse au chocolat blanc et aux oranges sanguines (White chocolate and blood orange mousse cake) We also had the new Pastry Chef Arnaud Bonnefoy to observe how Chef Hervé taught.  This cake was one of the most complicated cakes to make in class so far.  Chef Hervé was so organized and clean.  As he said, this cake was all about organization.  Our group did not have the privilege to study the notes for 3 hours before practical class.




Practical Class#10: I purposely went to line up for class right after the demo because of we experienced yesterday.

When I went up, like yesterday, some classmates were already there.  Jocelyne also came early, so for sure, we would get our "usual" spots, at least for today.  It was a critical class since we had to make this complicated cake (3 types of cakes, and 2 types of mousse, and chocolate decoration involving tempering) in 2 hours and half.  I wanted to make sure I could get a good spot to work.  It's always nice to have Jocelyne to work besides me, she was fast, organized and helpful.... not like other classmates..... I was glad that we both worked so fast (thanks for your help though!), and first to put the cakes in the blast chiller, but then realized that everyone was opening the door for their cakes.  So after we put the last mousse on cakes, we just put the cakes in the freezer instead.  Basically all of us was racing to finish, some did the chocolate decor, some did the cigarette decor, pretty mush non-stop working for hours.  I remember Chef Eric was telling me that I had 5 mins to put all the decors and fruit on top of my cake! Well, I was glad to have it done on time.  What a class!!

Blood orange mousse on top layer, flourless sponge cake on second, white chocolate mousse on third, lady finger with syrup on the bottom, and joconde biscuit on the side.

After Group A finished their class at 6:30pm, Cindy and Jason met Tanvi, me, Quinn and Matt for dinner in Korean restaurant.  It's always fun to gossip.

February 6, 2013 Wednesday
Term Evaluation: When I knew we would have term evaluation with Chef Eric, I told myself it would only be 2 or 3 mins chat.  Surprisingly, we chatted for 24 mins.  Sorry Quinn! (she was next)  Chef Eric asked me how old I was, what I did before LCB, and what my plan would be after LCB.  I asked him for advice, and I was glad to hear that I was one of the top students in class :-) even though I already knew it! LOL LOL LOL He told me that he might move me to another spot in the kitchen so that 2 other students could work near him :-( Bye Jocelyne!

Arrived at Union Station, Mandy came and picked me up.  I bought George's chicken on the way to Mandy's house, dropped her off, then headed to Kevin's place.

February 7, 2013 Thursday
I got up early today, and went to Roncesvalles Streetcar Division to visit my ex-colleagues.  Karl, Stu, Regula (with Mike Junior) were there for holiday sign-up.  Then I went and bought a Nutri-bullet in Canadian Tire.  I can't wait to try it!  Then I went up to Pacific Mall in Markham for haircut.  It started snowing when I finished haircut and was heading down to Downtown.

Derek's Birthday Dinner @ PAESE: Derek's birthday is on Saturday, but it's best for us to have dinner tonight.  We went to Paese Ristorante 'cos Derek only likes Italian food.  I left my camera in Ottawa, only used my iPhone for photo taken.

Snow Storm: It had been snowing for overnight and whole day today.

After lunch, we rented a movie dvd and headed home.  We watched a movie called Hugo http://www.imdb.com/title/tt0970179/plotsummary I quite liked it, well I like everything French.

Kevin and I just walked around Yonge Street and Eaton Centre this morning, then had lunch in The Pickle Barrel.
Then, went home and watched movie while having pizza for dinner.  The movie is called The Odd Life of Timothy Green http://www.imdb.com/title/tt1462769/ Loving story.

I got up around 6:15am, so that I could pick up Mandy and James and get back to Ottawa.  Thanks Kevin for letting me stay at your place!
It was an easy ride when you had friends in the car to chat with.  The weather and road conditions were excellent.  We went for sushi buffet in Hokkaido Sushi in Dalhousie Street www.hokkaidosushicanada.com to celebrate Chinese New Year.

Then Mandy drove her car back to Toronto, James needed to take a nap.  I just finished my laundry and needed to get ready for classes tomorrow.
